Eating a hearty breakfast is obviously important. But, during the week it can be a challenge - especially now that my teen has decided he can do everything by himself.
Does he have the know-how to cook some scrambled eggs or make a pot of oatmeal? Absolutely. Will he get up early enough to do it? Not a chance.
That’s where this blueberry baked oatmeal comes in. It requires hardly any effort, can be made in advance, and makes an entire week’s worth of breakfasts. You can even freeze it if you want. Just like my breakfast egg sandwiches, you’ll spend about an hour in the kitchen and then have satisfying meals waiting for you in the morning.
If you haven’t had baked oatmeal before, it’s exactly what it sounds like. Instead of cooking oatmeal on the stove or in the microwave, you prepare a big batch and bake it in the oven until golden. This recipe is made with old-fashioned oats, fresh blueberries, eggs and a few other pantry staples. You probably have everything you need in your kitchen already.
When it’s time to dig in I like to eat my slices cold with whipped cream and fresh fruit on the side. But my son prefers to go to town: he’ll warm up his slice in the microwave, then serve it with fruit, whipped cream, and probably more maple syrup than I should allow but I pick my battles. 😉
