4th of July Blueberry Shortcake

Everyone has heard of strawberry shortcake, but have you heard of its unassuming cousin, blueberry shortcake? Now that strawberry season is winding down, it’s time to get acquainted with this luscious summer dessert.
Essentially, this is a classic strawberry shortcake made with fresh blueberries instead of strawberries. Tender homemade biscuits are sliced in half, then stuffed with a quick blueberry sauce, whipped cream, and vanilla ice cream. Blueberry shortcake is especially spectacular if the biscuits and sauce are warm, then paired with cold whipped cream and ice cream. Perfection. Just thinking about it is making my mouth water.
If you want to make this for the 4th of July, here’s a simple idea: serve it with fresh sliced strawberries. Then you’ll have red from the strawberries, white from the whipped cream and ice cream, and blue from the blueberries! I didn’t think about this option in the photos and videos you see in this post, but I’m 100% running with this idea on Thursday.
