I’ve already shared two of my favorite mug cakes and a brownie in a mug recipe, so today I thought it was time to delve into the realm of cookies.
That’s right, you can make all kinds of cookies in a mug in only a few minutes. Chocolate chip, sugar cookies, oatmeal cookies, peanut butter cookies… you’d be surprised by just how much goodness you can manifest with your microwave.
However, before you continue reading, a warning: This is powerful kitchen magic. Once you know how to make cookies in a mug there is very little to stop you from making cookies any time you want.
In other words, your midnight snacks just got an upgrade. #sorrynotsorry
Why You’ll Love This Recipe
Quick & Easy. All you need is a mug, simple ingredients, and a microwave. Oh and less than 5 minutes. It doesn’t get any easier than that my friends!
Perfect amount of sweetness. This cookie features caramel undertones from the brown sugar and is studded with semisweet chocolate chips. Digging into this chewy cookie is a total delight.
Ideal cookie texture. The main difference between a cookie in a mug and a mug cake is texture. Mug cakes are fluffy, while mug cookies are firmer and slightly chewy. This difference is accomplished by decreasing the amount of leavening agent in the recipe and changing the kind of sugar used.
Ingredient Notes
Butter: I recommend using unsalted butter to better control the overall saltiness of the cookie.
Two Kinds of Sugar: We’ll use both white and brown sugar. Both light and dark brown sugar work, but don’t substitute all of it with white sugar. The brown sugar adds chewiness and a subtle caramel note to this cookie.
Vanilla
Salt and Baking Soda: Essential for flavor enhancement and ensuring the cookie rises properly.
Milk: Any type of milk will work. I have successfully used cow's milk, oat milk, and soy milk. I imagine macadamia or almond milk would also be suitable.
An egg yolk: While many mug recipes omit eggs, I find that most baked treats benefit from using one. It adds moisture, acts as a binder for the ingredients and makes the finished cookie more tender.
All-Purpose Flour
Chocolate Chips: I usually opt for semi-sweet chocolate chips, though milk chocolate or dark chocolate are also great options. Milk chocolate chips will sweeten your cookie more, while dark chocolate provides a less sweet, more intense flavor.
Tips for Success
Use a microwave safe mug. This is important! Make sure you check the bottom of your mug before using it to make a mug cookie in your microwave.
Mug size. This chocolate chip cookie recipe doesn’t rise as much as my mug cakes so you can use a standard sized 11-oz mug. However, I recommend a wider mug vs. a more narrow coffee mug. This will give you a better cookie texture.
Mix well, but don’t over mix. Be sure to get your spoon in there and mix all the dry ingredients in with the wet ingredients. Especially get into the nooks along the bottom edge of your mug. Stop mixing as soon as the batter is combined.
Let it cool. Your cookie will be HOT when it is done. Give it a few minutes to cool before digging in.
How to tell when your cookie is done? The cookie is done when the center is firm (but not hard) to the touch.
Add toppings. I like to serve this chocolate chip cookie in a mug with vanilla ice cream, chocolate chips and chocolate syrup. You could also add whipped cream of even fresh fruit if you like!
