Spring in the rural northeast is a lesson in enjoying whatever life decides to give you. This past week we had two glorious days with temps reaching well into the low 60s. This is what we call the Spring of False Hope.
And today? Second Winter has arrived.
But here’s where the life lesson comes in. Because instead of lamenting the loss of Spring, we’re soaking up these last days of Winter. It’s time to get a roaring fire going in the living room, time to sled down your favorite hill. Time to make a snow angel, then rest on a snow-covered bank watching flakes float from the heavens to earth.
I love this time of year.
Winter in March is also ideal for pulling out recipes like these cinnamon roll sheet pan pancakes. I mean, is there anything better than digging into a warm stack of pancakes while watching the snow fall outside?
If you want to make pancakes that taste like cinnamon buns - without standing in front of the stove for a good bit - then this recipe is for you. Today we are going to make a giant pancake with cinnamon swirls, then we'll cut it into slices and drizzle cream cheese icing on top. Sound good? 😋
Why You’ll Love These Cinnamon Roll Pancakes
EASY. Usually cinnamon roll pancakes are made by piping a swirl onto stovetop pancakes before they are flipped. While this method does work, it’s also tricky. With this method, the cinnamon swirl caramelizes in the pan and can fall out of the pancake. But if you use a sheet pan things are simple. No fuss, no mess and no hassle – just perfect cinnamon roll pancakes.
They taste like cinnamon rolls. The first time I made these pancakes for my family they couldn’t get over how much they tasted like cinnamon rolls. Between the cinnamon swirl in each pancake and the cream cheese icing, these pancakes hit all the right notes.
What Is a Sheet Pan Pancake?
A sheet pan pancake is a giant pancake made in a sheet pan. First you’ll mix up the pancake batter, then you pour it into a prepared sheet pan and bake it in the oven. Once the pancake is done you just let it cool for a bit, then slice and serve.
What size pan do I need?
I used a small cookie sheet pan for this cinnamon roll pancake recipe. The pan size is 15.25 inches long, 10.25 inches wide, and about 1-inch high. The smaller sheet from this Wilton set works well.
Quick Tips for Success
When to add the icing: I recommend adding the icing to the sliced pancake. If you drizzle it over the entire pancake, then you can’t heat up extras later. 🙂
Don’t skip the cornstarch: It helps make the finished pancakes nice and fluffy.
