It’s Wednesday and I don’t know about you but I could use a little mid-week treat. My oven is being replaced as I type, which means I can’t bake anything. But I’m nothing if not persistent and shall not be denied! So, since it’s pumpkin season and all, let’s take a few minutes to make a fluffy pumpkin mug cake, shall we?
This is, by the way, going to be a short post as befitting a super simple recipe.
With just the right amount of pumpkin spice, this is an easy dessert that will satisfy your sweet tooth with hardly any effort. You’ll only need some pumpkin puree and a few pantry staples to make a tender cake for one. It’s pretty much like making yourself a single slice.
I recommend serving this mug cake with vanilla ice cream, chocolate chips, or whipped cream. (I add all three - why not? Live, I say.) You can pile your fixings on top of the cake in the mug itself, or you can scoop the cake out into a bowl and add your toppings there.
