🍓 Strawberry Pancakes with Fresh Strawberry Sauce

Is there anything better than a tall stack of pancakes in the morning? These simple pancakes are studded with sliced strawberries, then served with fresh strawberry sauce, more berries and whipped cream. Add maple syrup too if you like!
We are a family of pancake lovers and make them in more ways than you can imagine. Old fashioned pancakes, chocolate pancakes, pumpkin pancakes, cinnamon roll pancakes… the list keeps going!
This strawberry variation is one of our go-tos when spring and summer come around. The pancake batter is based upon my old-fashioned pancakes (which I will post soon) with some extra vanilla and thinly sliced strawberries nestled like jewels in the batter. Add some fresh strawberry sauce or a layer of strawberry jam on top for even more strawberry goodness.

Easy. There is nothing complicated about this recipe. Simply mix up some pancake batter, then add sliced strawberries while the pancakes cook.
Flexible. I have included substitutions and variations in the “What You’ll Need” section below. Suffice it to say, you can use other kinds of berries, any kind of milk, and can also sub some of the flour with whole wheat if that’s your jam.
Can be made in advance. My son likes to make a batch of these on Sundays and then stores the cooled pancakes in the fridge for quick school-week breakfasts. I’ve included fridge, freezer, and reheating instructions below.
