Too Many Eggs Marble Cake
A moist & fluffy vanilla cake with chocolate swirls that's a god-send for chicken keepers.
❤️ Did you know that if you hit the HEART at the top or bottom of this post, it makes it easier for people to find this newsletter? (And makes my day!) 🥰
This moist marble cake has a tender crumb and uses almost a dozen eggs. It’s an excellent (eggscellent?) way to use up extra eggs, especially if you have chickens.
This recipe originally appeared on my food blog, where it received rave reviews. It is now available exclusively on Substack for supporting members. Here’s what one reader had to say about this recipe:
There are two kinds of people when it comes to this marble cake.
There are regular folks who will look at the number of eggs required and think: Good lord, that is an insane number of eggs.
Then there are the chicken keepers, who will look at the number of eggs in this recipe and think: Thank goodness. I get to use up some eggs!
This recipe is for all the chicken keepers out there who have more eggs than they know what to do with! It uses 10-11 eggs, depending on what size your hens lay, and can clear up a nice amount of counter space in one go.
What Makes This Marble Cake So Good?
Easy – Despite the impressive end result, this cake is simple to make. All you’re going to do is make vanilla cake batter, chocolate cake batter, and then swirl them together.
Moist and fluffy – Each slice of this marble cake is moist, tender and fluffy. I love serving slices with whipped cream and a hot cup of coffee or tea.
Elegant – This recipe is easy enough to make when you’re simply craving homemade goodness, yet also fancy enough for Sunday brunch and special occasions.
Uses a lot of eggs - This may or may not be a selling point for you. But if you’re a chicken keeper I’ll wager it is!
