I love this time of year when the summer sun is shining and everything is bursting to life. Tomatoes, summer squash, purple burgundy beans, and oh so much zucchini.
Yesterday I peeked in the garden and there’s zucchini here, zucchini there, zucchini everywhere! My fridge is overflowing, my counters are covered, and I’m quickly turning into the zucchini version of Bubba from Forrest Gump. We’re making zucchini parmesan, zucchini fritters, zucchini bread, zucchini tarts, zucchini muffins… and now, zucchini brownies.
I've been making these zucchini brownies for years and they are the BEST. Of all the things I make, they are one of my most requested summer desserts.
When I've made them for neighbors, people inevitably text me with something like: "OMG these are SO GOOD! Please send me the recipe!" (This is an actual text from someone FYI.)
And when I take them to potlucks? Fuhgettaboutit. My husband once joked I should print the recipe out and carry it with me as a calling card.
Now you may be thinking… zucchini? In brownies? That’s crazy. But I’m telling you, these brownies have the perfect balance of fudgy and cakey, with a thin layer of chocolate frosting on top. The frosting is made in the microwave in less than two minutes. When it cools, it gets this shiny sheen and will crack when you bite into a brownie. Oddly satisfying.
Even though this recipe uses 2 whole cups of shredded zucchini (which is about 2-3 zucchini depending on their size), you’d never know it’s there. You can’t taste the zucchini at all. Most people don't even know these are zucchini brownies unless I tell them. 😆
So, if you’ve got a bunch of zucchini and are a chocolate fan, bake up a batch of these brownies and prepare to be hooked.
