Apple Baked Oatmeal
This easy baked oatmeal is filled with tender apples, warming spices, and hearty oats. Serve slices with maple syrup and whipped cream.
As the crisp autumn air sets in, there’s nothing more comforting than a gently spiced breakfast to start the day. This cozy baked apple oatmeal is just the thing. It’s a twist on my blueberry oatmeal recipe, but with all the flavors of fall.
The base recipe stays the same, but this time we’re adding warming autumn spices like cinnamon, nutmeg, allspice, and cloves. Then instead of blueberries, we’ll briefly cook apple slices in butter and cinnamon sugar until they’re soft and caramelized. Once tender, the apples are mixed in with the oatmeal mixture, then everything is baked until golden.
Altogether this recipe takes about 15 minutes to assemble before baking. With twelve hearty servings, it can be made ahead and sliced up during the week for a satisfying breakfast in minutes. Simply pop a slice in the microwave and add your favorite toppings. I like to enjoy my oatmeal with whipped cream and fresh fruit, while my family likes theirs with a drizzle of maple syrup.
With apple season in full swing, I’m excited to dive into even more apple recipes. And if I’m being totally honest, I’m having a hard time deciding which ones to send you.
What should I share next? Apple honey cake? Apple crisp French toast? Or how about the apple cobbler recipe that made my husband fall in love with me 20+ years ago (after I set his house on fire)?
So many recipes, so little time. And we haven’t even gotten to pumpkin season yet!
