When it comes to summertime desserts there’s no doubt that I have one recipe that rules them all: my irresistible zucchini brownies. The number of emails and texts I get when I take those brownies to a get-together is crazy.
But, if we’re measuring how good a dessert is by the number of messages I get about it, there is one treat that comes a close second: this lemon slice recipe. Every time I make it, people hound me for the recipe.
Last year I shared some slices with a gentleman who was trimming trees in our neighborhood and he messaged my husband not once, not twice, but three times requesting the recipe. "These are the best lemon slices I've ever had!," he exclaimed, Mmmmm good!"
I saw him again a couple of weeks ago. He immediately remembered me as “the lemon slice lady” and said it was one of his family’s favorite treats. They make it whenever it’s too hot to turn on the oven.
I hadn't originally planned to share these lemon slices here on Substack. The recipe is just so easy. But with the summer heat in full swing, I decided this no-bake dessert needs some time in the spotlight.
Are you ready to dive in? You'll only need a food processor and a few ingredients to make these bars. The recipe comes together in minutes and doesn't require any baking. You simply assemble the base and chill in the fridge, then mix up a quick lemon frosting to spoon on top. A sprinkle of sweetened coconut flakes finishes it off.
All that’s left to do? Chill for 30 minutes, then slice and serve. Let me tell you, when you dig into these goodies every bite is full of bright citrus flavor and coconut-y goodness. You’ll be going back for seconds in a hurry.
