Full of pumpkin flavor and autumn spices, these tender muffins are perfect for busy mornings.
We are big muffins fans around here. Give me a warm muffin any morning of the week and I’m a happy camper. Especially if I’ve had the gumption to make a “fancy” drink like a cinnamon dolce latte on the side.
These tender pumpkin muffins are our go-to in October and November every year. We make them on the regular until around early December when pumpkin season wanes and we begin leaning into banana bread muffins, chocolate muffins, and chocolate chip muffins with streusel topping.
Thanks to a whole can of pumpkin puree, pumpkin spice, and cinnamon, every bite of these muffins is rich with fall flavor. This recipe is incredibly easy to make and will fill your kitchen with cozy “autumn has arrived” vibes. You can even customize it with mix-ins like chopped nuts, chocolate chips, or dried cranberries.
I love how moist and perfectly fluffy these muffins are. The first time I made them my kiddo literally RAN into the living room after eating one and exclaimed: Can I have another one?! These muffins are so good!
Five years later, he still loves them — even if his reactions are a bit more 'teenager-esque' now. ;)
