Ice Cold Strawberry Hibiscus Pink Drink
A refreshing strawberry drink made with fresh berries, maple and hibiscus.

It’s hotter than blue blazes around here and that got me thinking about cold drinks. Because when I see triple-digit temps in the forecast, that’s my cue to slip a straw into something icy and hopefully snag some hammock time with a good book.
And since I’m nothing if not a sucker for Starbucks drinks, today I’m sharing a homemade riff on a Starbucks Pink Drink - or as some like to call it, a “pinkity drinkity.” It’s not a copycat recipe per se because I do change the flavor profile slightly, but let me tell you - this drink hits the spot on a sweltering afternoon.
So what’s in this fruity and refreshing libation? Mashed strawberries, hibiscus tea, coconut milk, and juice. Also, lots of ice! 🧊 I recommend using a thick boba-style straw so that you can enjoy pieces of mashed berries as you sip.
In terms of sweetness, you can sweeten your drink with simple syrup or maple syrup, depending on your preferences. I’ve included a recipe for making simple syrup below as that will give you the most “authentic” Starbucks flavor if that’s what you’re looking for. However, I’m rather partial to using maple syrup both for its flavor and because I always have some in the fridge. The hints of maple go beautifully with fresh strawberry and coconut.

It’s always helpful to have a few notes about brands and substitutions. So here are some quick tips for this recipe:
Simple Syrup – If you choose to make the simple syrup, make it the night before so that it has time to chill in the fridge. However, you can also use maple syrup. Honey and agave would also work. I recommend adding 1 teaspoon of sweetener to each glass, giving it a good stir, then tasting and adjusting as needed. Don’t try to add plain sugar as the granules will not dissolve in cold liquid and you’ll end up with a grainy drink.
